Thai Green Curry - An aromatic green curry cooked with assorted vegetables and paneer.
Eaten with steamed rice, it is a favorite  with all members of the family.
 
 Thai green curry is very good in taste.

Thai green curry - Recipe Ingredients

• 7-8 tsp green curry paste, ¾ cup mushrooms diced,  ½ cup green peas, ½  cup cauliflower, 1 cup capsicum diced, ½  cup baby corn sliced, 1 ½ cup coconut milk, ½ cup water, ½ cup paneer, cubed and deep fried, 2 tsp sugar, 1 tsp basil leaves, chopped, 1 tsp oil, salt to taste.
• For the green curry paste – 8 to 10 green chilli chopped, 6 cloves garlic peeled, 1 onion chopped,  ¾ piece of ginger peeled,  1 cup chopped coriander,  1 juice of lemon,  1 tsp coriander powder, 2 tsp cumin powder, 2stalks lemon grass, 1tsp salt, ½ tsp pepper.

Method for Thai green curry

For the green curry paste
• Grind all the ingredients in a blender using little water to make a paste. Store in a refrigerator .alternatively freeze for 3 months. Use as required.
 
How to proceed  for Thai green curry

• Combine the mushrooms, peas, cauliflower, capsicum and baby corn shallow in a microwave safe bowl. Sprinkle 2-3 tsp water and micro for 6 min till the are tender. keep aside.
• In the another microwave safe bowl combine the oil and curry paste and mix well. Micro for 2 min.
• Add the coconut milk, water  cook veg., paneer ,sugar and basil leaves and mix well.micro for 5 min.
• Served with jeera rice.
