Manchow Soup Recipe

4-5 Chinese mushrooms 
1-2 Mushrooms 
½ cup Cabbage 
50gm Tofu (bean curd) 
1 cup Capsicum Chopped
Green chillies 
2 slices Bamboo shoot 
1Carrot chopped
1 Inch Ginger Chopped
1-2Garlic, cloves
1Spring onion 
1 cup Noodles 
2 tsp Oil for Manchow Soup
Cornstarch 3 tsp
1/2Red chilli sauce 
Soy sauce 2 tsp
White pepper powder 1/2 tsp
¼ tsp Ajinomoto 
Salt to taste for Manchow Soup
3-4 CupsVegetable Stock 
1 tsp Vinegar for Manchow Soup
 
How to make Manchow Soup Recipe
 

  • Wash and soak Chinese mushrooms in hot water for fifteen minutes. Drain, wash thoroughly and chop finely.
  • Wash and finely chop mushrooms, cabbage and tofu. Wash, halve, deseed and finely chop capsicum. Remove stems, wash
  • And chop green chillies.
  • Boil bamboo shoot slices in half a cup of water for three to four minutes. Drain completely, cool and chop finely.
  • Peel, wash and finely chop carrot and ginger. Peel and finely chop garlic. Wash, peel, finely chop spring onion
  • And reserve some chopped spring onion greens for garnish.
  • Boil noodles in three cups of hot water, remove and drain well. Heat sufficient oil and deep fry boiled noodles
  • For two minutes or until light brown and crisp. Remove and drain onto an absorbent kitchen towel. Blend cornstarch
  • In half a cup of water and keep aside.
  • Heat two tablespoons of oil in a wok or a pan, add chopped ginger, garlic, green chillies and stir fry briefly.
  • Add chopped spring onion and cook for a couple of minutes.
  • Add chopped mushrooms, cabbage, bamboo shoots, tofu, capsicum, carrot and cook on medium heat, stirring
  • Continuously for two minutes.
  • Add chilli sauce, soy sauce, pepper powder, ajinomoto, and salt to taste and stir well to mix. Stir in vegetable stock
  • And bring to a boil. Reduce heat and simmer for two to three minutes.
  • Stir in blended cornstarch and cook for two minutes or until the soup thickens, stirring continuously.
  • Stir in vinegar and serve piping hot, garnished with crisply fried noodles and spring onion greens.
  • Serve hot  Manchow Soup.
  • Serve Manchow Soup for -4
