Introduction for Vegetable stew
Vegetable stew is a south Indian vegetable cooked in coconut milk and flavoured with ginger, served traditionally with appams. Vegetable stew is very good for health.
Ingredients of Vegetable stew
• 1 ½ cup mix vegetables [carrots, cauliflower, French beans] , died.
• 2 cup coconut milk, 8 peppercorns, 1 tsp ginger, sliced.
• 1 tsp green chilli sliced, ½ cup onion sliced.
• 10 curry leaves, 1 tsp corn flour mixed with 1 tsp wqter.
• 2 tsp oil, salt to taste for Vegetable stew
Serves for 2 Vegetable stew
Method of Vegetable stew
• In a microwave safe bowl add the vegetables along with 3 tsp water and micro for 4 min.
• In the other micro wave safe bowl add oil, peppercorns, ginger and chilli, micro for 1 ½ min.
• Add the onion and curry leaves and mix well. Micro for another 4 min and stirring once after 2 min.
• Add the cooked vegetables , coconut milk, corn flour paste, salt and micro for 2 min.• Serve hot with rice.
